Brown Sugar cookies
These were very, very, good.

Brown Sugar Cookies
Makes 2 Dozen Cookies
14 tablespoons unsalted butter (1 3/4 sticks)
1/4 cup granulated sugar (about 1 3/4 ounces)
2 cups packed dark brown sugar (14 ounces)
2 cups unbleached all-purpose flour plus 2 tablespoons (about 10 1/2 ounces)
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon table salt
1 large egg
1 large egg yolk
1 tablespoon vanilla extract
Heat 10 tablespoons of the butter in a pan over medium-high heat until melted. Continue to cook the butter until it is browned a dark golden color and smells nutty, about 1 to 3 minutes. Transfer the browned butter to a bowl and stir the rest of the butter into the hot butter until it melts- let this rest for 15 min. Preheat oven to 350 degrees F. In a baking dish, mix granulated sugar and a ¼ cup of the brown sugar until combined well; set this mixture aside to roll dough balls in. Mix flour, baking soda, and baking powder in a bowl. Add 1 ¾ cup brown sugar and salt to cooled butter and mix until there are no lumps. Add egg, yolk, and vanilla to butter mixture and mix well, then add flour and mix until just combined. Roll dough into balls about 1 ½ inches in diameter, and roll balls in brown sugar and white sugar mixture. Place balls about 2 inches apart on parchment lined baking sheets. Bake sheets one at a time until cookies are puffy and lightly browned, about 12- 14 minutes. (It says the cookies will look slightly raw between some of the cracks and seem underdone, but be careful not to overbake.) Cool on sheet for about 5 minutes and then transfer to a rack to cool.

Happy St. Patrick's Day!
***May you live a long life
Full of gladness and health,
With a pocket full of gold
As the least of you wealth.
May the dreams you hold dearest,
Be those which come true,
The kindness you spread,
Keep returning to you.

***When we drink, we get drunk.
When we get drunk, we fall asleep.
When we fall asleep, we commit no sin.
When we commit no sin, we go to heaven.
So, let's all get drunk, and go to heaven!
Full of gladness and health,
With a pocket full of gold
As the least of you wealth.
May the dreams you hold dearest,
Be those which come true,
The kindness you spread,
Keep returning to you.

My love for the Kindy's
I have been volunteering at the school library, twice a week since Sept. I enjoy it.
I love seeing the kids get excited about what they are going to read next and the ones who come in and Bear hug me, to the ones who just kinda stare at me and really creep me out.....
anyway, today, the Kindergarten class came in and the teacher always reads them a story. (She is my favorite teacher evah!!) so, at the end of the story she asks the class to tell her what the moral of the story was. Hands were raised quickly and one girl says, "it is about being who you are and liking it" Love it!!!! Mrs P. looks at me and we both beam, we love it when kids get it.
So J. raises his hand and says, "I want to be a fish".
V. says, "yeah, then a shark will eat you".
It was good while it lasted.

Dear Mrs. Bus Driver,
My name is Beth Larabee and my sons Christopher and Sam ride your bus everyday to school. For 6 months they have been on the bus and NOT ONCE have you told me about bad behavior coming from Sam. Then, out of the blue, I was called into the Principal's office and was told that you filed a complaint against Sam for punching/pushing a kid and you said "This is the last straw"! Well,, how do you expect me to correct his behavior if I am NOT aware of what is going on. I am outside with the boys every morning and NOT once have you called me over to the bus to discuss this with me. Not once have I gotten a phone call to let me know that this was going on. I have had a discussion with Sam about this and hopefully this will not happen again. I realize that you are not a babysitter but a little common courtesy would have been appreciated in this matter.
Thank you,
Beth Larabee
Well, you should have seen the look I got when I handed this to her this morning. Oh well, better a letter than me pulling her out of the bus by her ponytail!! I guess I know where Sam gets his temper now HUH?
